Digression n°6 : the best chocolate cake ever

I first ate this cake for my 11st anniversary, at a restaurant in South West of France, well not such a long time ago by the way :-)
We all found it so gorgeous that we asked for the recipe.
And since that time, I've kept to cook it time to time. I think I've never tasted better one yet...Maybe because of "souvenir souvenir" maybe because it is really good !
So please let me share with you the secret recipe.




Ingredients for 8 :
320 g of chocolate for pastry (57 to 65% of cocoa)
160g of butter (you can use 1/2 salted one)
160g of sugar
5 eggs
1 tablespoon of flour

First preheat the oven to 180°C, 350°F.
Break the chocolate in small squares, put them in a bowl with sugar and butter cut in little cubes. Put the bowl on a "bain-mairie" to make all the ingredients melt in a homogeneous paste. Remove from the bain-marie.
Separate egg whites and yolks. Add the yolks to the paste.


In an othe bowl, wisk the egg whites with a pinch of salt until you get firm peaks forming.
Add the flour to the chocolate paste and stir. Then add gently the egg whites.
Pour into a cake tin you had buttered if necessary (you can use silicon tin) and bake for 35 min. Have a look time to time to avoid baking to quickly the top of your cake.
Don't wait till the cake is completely baked, it's better when the inside is still a little creamy.
Remove from the oven and let it cool down before eating.
